A: My favorite cut of meat for steak would be the porter house but rib eye is good too.
dry rub
equal amounts of
salt
pepper
onion powder
garlic powder
thyme
mix together and rub well into meat,refrigerate until time to cook them
I don't marinate choice cuts of meat because I want to taste the meat.use marinades for cheap cuts.
Ive included a copy/paste of a site for cook times cause Ive always used the pad'0' the thumb method and that's hard to teach here.
grill marks are easy. lay your steak down and say you re gonna cook it 3 minutes on each side, at 11/2 minutes give it a quarter turn ,if you use a fork stick it in the fat on the outside so as not to lose your juices (and flavor)
repeat on flip side.
at this time if you want you can slather some sauce on it .
some thing I like to do is as soon as I take it off the grill i put on some tarragon butter that Ive prepared ahead of time.
1 tsp dried tarragon
4tbs salted butter
mix well
chill
-----------------------------------------------------------
serve steak with sauteed mushrooms and onions
crusty bread
green salad
red wine(oops sorry forgot the manly man thing) good beer

A: I don't think you want other veg and a side salad- personally I would do a potato and veg route or else posh chips and salad.
A sauce for the steak is a possibly, but with really good quality meat, not necessary. Some strong flavours there- rosemary and garlic - you don't want too much of a clash.
Sounds quite rustic and powerful- I hate them personally but a medley of mushrooms (the dried sort reconstituted with their liquor reduced, dash of red wine, butter maybe parsley) would be good I think

A: Fat is Flavor, Forget Filets and Mignons, and Mignons of Filets - we've all got teeth ( i hope) Don't be afraid to use them. As was said before, a good NY Strip or ribeye can go a long way, no more than an inch or so thick. For alot of real beefy flavor - try a nice flatiron steak.
Tenderloin has no flavor - Yes it's tender, but I like to taste my meat - so I can remember I'm actually eating.

Q: I was just at one and they had this big bbq grill. The kind you can tow behind a truck and they were grilling up the steaks and serving them nice and hot and juicy. I can't wait until the next kid gets married. Yum!
A: I was a business event not a wedding.
The guy had tow able smoker and a grill.
He smoked ribs and pork butts.
He grilled chicken, steaks and burgers.
There were around 50 people and it was AWESOME

Q: We will be grilling steak tomorrow night. We usually have baked or mashed potatoes and a green salad with the steak. I am looking for some new ideas and menu plans. I do have a large bag of golden yukon potatoes I purchased at Costco that I really need to make use of. Suggestions and recipes most appreciated.
A: Parboil your potatoes and then slice in half. Brush with some oil and put on the grill with the steaks. They get those delicious grill marks on them, sprinkle them with some garlic and some salt. Yum.
Asparagus may be fairly inexpensive right now in early spring. I got some the other day for 1.99 a pound. Once you take the steak and potatoes off the grill, grill your asparagus. Or any other veggie. Nothing to wash except the serving platters.

Ingredients:
***Marinade***
1/2 cup water
1 teaspoon soy sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon onion powder
1/4 teaspoon liquid smoke flavoring
1/4 teaspoon black pepper
1/4 teaspoon chili powder

2 bonelesschicken breasts
1 cup cooked rice
1/2 cup enchilada sauce
1/2 teaspoon salt
4 (12") flour tortillas
1/3 cup shredded Cheddar cheese
1/3 cup shredded Monterey jack cheese
green onion -- sliced

Directions:
In a small bowl combine marinade ingredients. Pour the mixture over the chicken breasts and Marinade overnight. Cook the chicken on your barbecue or indoor grill over med-high heat for 5-6 min. per side, or until done. Slice the chicken into bite-size chunks. Add the enchilada sauce to the rice. Put on the rice over low heat, uncovered, and cook until hot. Heat the tortillas in a steamer, or wrap them in moist towels and heat on high for 25-30 sec. in the microwave. Build the burrito by spreading 1/4 of the chicken down the middle of one of the tortillas. Leave room at the end for folding. Spread 1/4 of the rice over the chicken. Sprinkle a heaping tablespoon of each of the cheeses over the rice. Sprinkle sliced green onions to taste. Fold up. You may want to heat up each burrito in the microwave for 20-30 sec. to help the cheese melt.
NOTES : I also spoon a little more enchilada sauce over chicken mixture. This is soooo good. Tastes like the real Taco Bell ones :-)))

Cooking Grilled Ribeye Steaks
You can grill a steak over gas, or charcoal, or over a wood fire, like Grampa did . To grill the best ribeye steak, follow these simple guidelines.
Steaks will grill more evenly if they are close to, or at, room temperature when they hit the grill. Let 'em warm up a bit before grilling.
Season both sides of the steak, and don't be stingy. Much of the salt, pepper, and whatever else you add will drip off as the steak cooks.
Grill Hot. A hot grill will seal in the juices by searing the outside of the steak. The browning is what makes a steak taste great. Cook over direct heat
Flip the steak only once
Use tongs to handle the meat. Don't pierce the meat with a fork or you'll lose the juiciness
Grill for four to seven minutes on each side
Check for doneness with a meat thermometer. Medium rare is 145 degrees Fahrenheit. 160 degrees is medium, and it's well done at 170 degrees.
That's about all there is to making a great grilled ribeye steaks. Just thinking about this is making me hungry!
